While the Tarheel State, unfortunately, technically does not offer any themed ice cream trains the popular North Carolina Transportation Museum does host a sweet treat event on the grounds during the summer.  More information about this can be found below!

While the museum does not host a special -ice cream-themed train ride, during select days in the summer, NCTM hosts "Ice Cream Days" where guests can enjoy a sweet treat - which they can make on their own! - while learning about the history of ice cream.  The event also includes craft-making for the kids and other fun activities.
